This is a great recipe to use up any bananas that are starting to turn bad in the fruit bowl as they aresuper sweet, meaning you don’t need to add any sugar.
This plant based treat is the ultimate healthy soft serve to enjoy on a balmy Summers day!
Prep Time: 10 minutes, plus overnight freezing
Cook Time: 5 minutes
Ingredients
- 2 ripe bananas
- 2 cups frozen mango (around 400g)
- 2/3 cup vanilla coconut yoghurt
- 1 lime1 tablespoons flaked coconut, toasted
Method
- Peel and slice the banana and place into a container and freeze for 4 hours or overnight.
- Place the banana, mango, yoghurt and lime juice into a high speed blender.
- Blitz for 2 minutes, or until smooth and creamy, adding a dash of water if the mixture needsloosening to mix.
- Place into serving bowl sand top with lime zest and coconut flakes before serving.
*Store the nice cream in an airtight container int the freezer for 2 weeks.
