ingredients - serves 6
- tablespoons olive oil
- medium onion, diced
- garlic cloves, finely chopped
- teaspoons tomato paste
- red capsicum seeded and diced
- teaspoon paprika
- teaspoon cumin
- teaspoon chili powder
- Roma tomatoes, finely chopped
- large eggs
- pepper, to taste
- small bunch fresh cilantro, chopped
- small bunch fresh parsley, chopped
- cup Greek style yogurt
- Flatbread or Crusty bread to serve
method
- Heat olive oil in a large fry pan on medium heat. Add the chopped onion and capsicum and cook for 5 minutes or until the onion becomes translucent and capsicum softens.
- Add garlic and spices and cook until aromatic, followed by the tomato paste.
- Add the tomatoes and juice into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer.
- Use your large spoon to make small wells in the sauce and crack the eggs into each well.
- Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking. Dollop with yogurt, garnish with chopped cilantro and parsley and serve with flatbread or crusty bread.
